A day on healthy homemade spicy chunky veg soup and water and I feel really good tonight. I feel cleaner inside. Silly hey, I know it's probably psychological but hey, I feel healthier after a really good day of diet food. I may make this a once a week detox or do it all next weekend. Anyone who may be interested here's a quick recipe. Vegetables of your choice + water and spices. :) Ok, this is the big recipe. I find it makes a "medium" spicy soup. Medium for my tastes anyway. Apologies for poor quantity description but this is the sort of soup you just chuck in whatever you have. Adjust it to your own tastes and add or miss out whatever you wish. This is just what I had in my fridge and storecupboard at the time Ingredients: 2 medium onions sliced Method: Heat a little oil in a deep saucepan and gently fry the onions on a medium heat. After a couple of minutes when the onions are beginning to soften add potatoes and carrots. Stir round and allow to absorb any remaining oil. Add the chilli powder and garam masala to the oiled vegetables. Being fairly dry this will allow the spice flavours to be taken into the veg. Add tin of tomatoes and tomato puree and a good splash of water. I would guess a pint roughly. Stir well and bring to the consistency of a THICK soup. Add tin of chick peas including the water they come in for additional flavour. Add remaining ingredients stir well. Check consistency. Add more water if required. Put the lid on, turn down the heat and allow to simmer for around 40 minutes or until potatoes and carrots are cooked through. Stirring occassionally so the veg don't stick to the pan. Generally once it is cooked I would add a good handful of lightly chopped corriander but I didn't have any today and it was just as nice. If it is too thick, add a little more water. If too watery, cook a little longer to thicken or gently mash the potatoes a little to thicken. You can blend it when cooler and reheat when required but I like it to have the lumps of veg so it feels like a meal. It creates loads of soup but it is all good for you and 90% water so you can eat it and eat it virtually guilt free. I cook it early in the day and eat it over the course of the day. Lunch, supper, snacks, late evening warmer before bed. Whatever. Comforting in winter without the stodginess of so much other comfort food.
